Broccoli Soup

A quick and easy Broccoli Soup recipe - save money and reduce waste by using leftover broccoli stalks.

  • 1 tbsp oil sunflower or light olive oil
  • 1 onion
  • 1 white potato
  • 3-4 broccoli stalks
  • 1 fresh broccoli
  • vegetable stock
  • black pepper


  1. Chop the onion

  2. Add oil to pan then add onion and saute for 1 minute

  3. Peel and cube the potato

  4. Chop the fresh broccoli

  5. Add potato and broccoli to the onion in the pan

  6. Cover with boiling water and vegetable stock cube or bouillon powder

  7. Bring to the boil then turn down the heat and simmer for 20-30 minutes until vegetables are soft

  8. Blend with a stick blender or in a liquidiser

  9. Add black pepper to taste and serve
