Apple Sticky Toffee Pudding

A delicious warm sticky toffee apple pudding  - perfect for autumn, and super quick and easy to make. Serve with custard, cream or ice cream

Ingredients

For the pudding

  • 2-3 apples cooking or eating apples
  • 140 g self-raising flour
  • 100 g golden caster sugar
  • 1 tsp baking powder
  • 1 pinch salt
  • 1 egg
  • 85 g unsalted butter
  • 200 ml milk
  • 1 tsp vanilla extract

For the sauce

  • 140 g dark brown sugar
  • 250 ml boiling water

Instructions

  1. Heat oven to 180 (fan) / 160

  2. Mix all dry ingredients in a bowl

  3. Add milk, egg and vanilla extract to melted butter and mix well

  4. Combine wet and dry ingredients to make pudding batter and set to one side.

  5. Grease a large oven proof dish. Peel, core and slice apples and layer on the bottom of the dish. 

  6. Pour pudding batter over apples and spread evenly.

  7. Dissolve dark brown sugar in boiling water then pour over pudding mixture. 

  8. Bake for 35 - 40 minutes until golden brown and toffee sauce can been seen bubbling up at the edges.

  9. Serve warm with custard, cream or ice cream.
