Easy Millionaire's Shortbread with Microwave Caramel Filling
Preheat the oven to 160°C
Line a 30 cm x 20 cm tin with baking paper
Beat butter and sugar together
Add the flour one third at a time and mix until it forms a dough
Press the dough into the tin until it covers the base
Prick the dough all over with a fork
Bake for 25-30 mins until light golden brown
Leave aside to cool in the tin
Add all the ingredients to a large microwaveable bowl and stir to combine
Microwave on medium for 10 mins, stirring occasionally until thick and caramel coloured
Carefully pour the caramel over the shortbread
Leave aside to cool
Melt the chocolate in the microwave or in a bowl over a pan of boiling water
Pour the melted chocolate over the caramel and spread out to cover
Leave until the chocolate is set
Lift the finished Millionaire's Shortbread out of the tin and cut into equal pieces
